Kielbasa Skillet Supper
Ingredients:
- 6 slices of bacon
- 4 potatoes, sliced
- 3 carrots, sliced
- ½ cup chopped red or yellow sweet pepper
- 1 cup chopped onion
- Salt and pepper to taste
- 1 lb. kielbasa or other sausage, sliced
- Ground celery and paprika to taste, optional
Directions:
- Fry the bacon in skillet until crisp. Remove and let cool, then crumble.
- Reserve most of the drippings and saute the potatoes, carrots, peppers, and onions in the bacon drippings until tender.
- Salt and pepper to taste (preferably with smoked salt and smoked pepper). Add ground celery and/or paprika if you like.
- Add the sliced kielbasa; cover and heat through 8-10 minutes.
- Serve topped with the crumbled bacon pieces.
Cook’s Note: Kielbasas and smoked sausages are often pre-cooked. If using another type of sausage, make sure it is either pre-cooked, or cook/roast before Step #4.
This also makes a tasty breakfast with a fried egg on top.
