Kielbasa Skillet Supper

Ingredients:

  • 6 slices of bacon
  • 4 potatoes, sliced
  • 3 carrots, sliced
  • ½ cup chopped red or yellow sweet pepper
  • 1 cup chopped onion
  • Salt and pepper to taste
  • 1 lb. kielbasa or other sausage, sliced
  • Ground celery and paprika to taste, optional

Directions:

  1. Fry the bacon in skillet until crisp. Remove and let cool, then crumble.
  2. Reserve most of the drippings and saute the potatoes, carrots, peppers, and onions in the bacon drippings until tender.
  3. Salt and pepper to taste (preferably with smoked salt and smoked pepper). Add ground celery and/or paprika if you like.
  4. Add the sliced kielbasa; cover and heat through 8-10 minutes.
  5. Serve topped with the crumbled bacon pieces.

Cook’s Note: Kielbasas and smoked sausages are often pre-cooked. If using another type of sausage, make sure it is either pre-cooked, or cook/roast before Step #4.

This also makes a tasty breakfast with a fried egg on top.
