Zoodle Salad with Peanut Sauce

Salad Ingredients:

  • 5-6 green and yellow zucchini, julienned
  • 1 red pepper, julienned
  • 2 carrots, julienned
  • 1/4 C cilantro, chopped
  • 1/4 C scallions, chopped
  • 1/4 C peanuts, chopped

Combine all ingredients in a large bowl and toss with Peanut Sauce (recipe below).  Editor’s Tip for julienned vegetables: If you don’t have a food processor attachment that will julienne or just want to do it by hand because it is relaxing 😊, slice each vegetable thinly, then lay a stack with a flat side down and slice horizontally making thin sticks.)

Peanut Sauce Ingredients:

  • 2/3 Cup Peanut Butter
  • 1/2 t Fresh Ginger, minced
  • 2 T Honey
  • 1/4 C Soy Sauce
  • 2 t Rice Wine Vinegar
  • 1/4 Cup Hot Water

In a blender, process all sauce ingredients together until smooth
