Sugar snap peas are currently in season, and the window is always a short one as the summer starts to heat up. Grab some this week at the Market and make this super easy side dish that is bright green, vibrant, and oh-so-tasty!
Roasted Sugar Snap Peas
adapted from a recipe at Taste of Home
Ingredients:
- 8 oz. fresh sugar snap peas, trimmed
- 1 tablespoon chopped shallot or scallions (green onions)
- 2 teaspoons extra virgin olive oil
- 1 teaspoon chopped fresh herbs (parsley, basil, oregano)
- 1/8 teaspoon salt
Directions:
Preheat oven to 400°. Toss together all ingredients; spread in a 15x10x1-in. pan. Roast until peas are crisp-tender, 8-10 minutes, stirring once. Makes 2 servings.
Pair this with any grilled meat for a great early summer meal or with loads of other fresh veggie dishes for a vegetarian feast!
