Fish Taco Foil Packets

Ingredients:

  • ½ teaspoon smoked paprika
  • ½ teaspoon cumin
  • ¼ teaspoon chili powder
  • ¼ teaspoon dried oregano
  • ½ teaspoon kosher salt
  • 2 6-ounce cod fillets, or any white flaky fish
  • 2 teaspoons avocado oil, divided
  • ½ bell pepper, stem and seeds removed and thinly sliced
  • ¼ cup red onion, thinly sliced
  • ½ cup fresh corn, from 1 ear
  • ½ small jalapeño, thinly sliced (optional)
  • 1 lime, cut into rounds, plus more for serving
  • Cilantro leaves, for garnish
  • 4 corn tortillas, charred, for serving
  • Shredded lettuce, for serving
  • ¼ cup guacamole, for serving

Instructions:

  1. Add the smoked paprika, cumin, chili powder, dried oregano, and salt to a small mixing bowl and stir to evenly incorporate.
  2. Drizzle the cod with 1 teaspoon of the oil and season with half of the spice blend. Set aside.
  3. Add the sliced peppers, onions, corn, and jalapeño (if using) to a mixing bowl. Drizzle with the remaining teaspoon of avocado oil and seasoning blend. Stir to coat the vegetables in the seasoning.
  4. Preheat an outdoor grill turning all the burners over high heat until it’s 400°F. Reduce the flame to medium heat, keeping one side on low.
  5. Tear off 2, 12-inch pieces of heavy-duty foil. Spoon the veggies onto the center of each piece of foil. Place a piece of fish on top of the veggies. Top with the lime slices. Bring two ends up and over the fish and crimp to close. Crimp sides so everything is completely enclosed and no steam escapes. Transfer the foil packets to a rimmed baking sheet to easily transport to the grill.
  6. Carefully place the foil packets on the low heat side of the grill and quickly close the lid. Cook for 10-12 minutes, depending on the thickness of the fish. Remove the foil packets to the rimmed baking sheet and let sit for 5 minutes before opening.
  7. Open the foil packets, there can be hot steam trapped inside so use caution while opening. Top with cilantro. Serve with charred corn tortillas, lettuce, and guacamole, and lime wedges if desired.

Notes: No Grill? No Problem! Bake the fish packets on a baking sheet at 375°F for about 10 to 15 minutes. Use any sweet and hot peppers you like!
