Hot days call for cool summer salads. If you plan on chillin’ & grillin’ this weekend, you can’t do better than this tasty combination of protein and late spring veggies.

Sesame-Ginger Steak Salad

Ingredients:

  • 1 lb. top sirloin steak (beef or bison)
  • 1/2 cup sesame ginger vinaigrette, divided (see below)
  • 1/4 teaspoon salt
  • 1/4 teaspoon coarsely ground pepper
  • 10 oz. romaine lettuce, chopped
  • 4 radishes, thinly sliced
  • 3 green onions, thinly sliced
  • 1 cup sliced cucumber
  • 1 cup fresh sugar snap peas
  • 1 cup grape tomatoes (or chopped tomato)
  • 1/4 cup minced fresh cilantro

Directions:

  1. Brush steak with 2 tablespoons vinaigrette; sprinkle with salt and pepper. Cook steak in a large skillet coated with cooking spray or on the grill over medium-high heat for 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 5 minutes before slicing.
  2. Divide salad mix among four plates. Top with radishes, onions, cucumber, peas, tomatoes and cilantro. Arrange sliced steak over salads; drizzle with remaining vinaigrette. Makes 4 servings.

Sesame Ginger Vinaigrette

Ingredients:

  • 1/3 cup orange juice
  • 3 tablespoons olive oil
  • 1 tablespoon sugar
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons sesame seeds, toasted
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon ground ginger or 1 teaspoon fresh grated ginger
  • 1/4 teaspoon salt

Directions:

In a jar with a tight-fitting lid, combine the ingredients; shake well.  Makes ½ cup.
